Description
Chewy gluten-free cookie sandwiches filled with your favorite ice cream—perfect for hot days or special treats.
Ingredients
1 cup gluten-free flour blend
1/4 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/4 cup butter, softened
1 egg
1 tsp vanilla extract
1 1/2 cups gluten-free vanilla ice cream
Instructions
1. Preheat oven to 350°F and line a baking sheet.
2. Mix dry ingredients in one bowl and wet ingredients in another.
3. Combine both and mix until a dough forms.
4. Scoop and flatten dough onto baking sheet.
5. Bake for 10–12 minutes. Let cool.
6. Scoop ice cream onto one cookie, press with another.
7. Freeze assembled sandwiches for 2 hours.
