These creamy gluten-free peanut butter yogurt bars are a no-bake treat made with simple, wholesome ingredients. Perfect for warm days and easy to prep ahead.
Ingredients
1 cup full-fat Greek yogurt
1/2 cup natural peanut butter
3 tbsp honey or maple syrup
1 tsp vanilla extract
1/2 cup dark chocolate chips (optional)
1 tbsp coconut oil (optional)
Instructions
1. Mix yogurt, peanut butter, honey, and vanilla in a bowl until smooth.
2. Line an 8×8-inch pan with parchment and spread the mixture evenly.
3. Freeze for at least 3 hours or overnight.
4. Melt chocolate with coconut oil, dip bars halfway, and let harden.
5. Serve slightly thawed and enjoy.

Store wrapped bars in the freezer for up to 1 month.
