Description
This no-bake pineapple juice cake is a quick, tropical dessert using just five simple ingredients. Moist, refreshing, and perfect for summer entertaining.
Ingredients
2 cups pineapple juice (100% pure)
1 box yellow or white cake mix (15.25 oz)
1 cup crushed pineapple, well-drained
1/2 cup shredded coconut (unsweetened)
1/3 cup melted butter
Instructions
1. In a large mixing bowl, whisk together cake mix and pineapple juice until smooth.
2. Stir in the crushed pineapple and melted butter.
3. Pour the mixture into a greased 9×13 dish or serving cups.
4. Sprinkle the top with shredded coconut.
5. Refrigerate for at least 2 hours until set.
6. Cut into squares or serve chilled.
Notes
Be sure to drain the crushed pineapple thoroughly to avoid excess moisture.
Store leftovers covered in the fridge for up to 5 days.
