Ingredients

2 1/4 cups all-purpose flour

1 tsp baking soda

2/3 cup brown sugar

1/3 cup granulated sugar

1/2 tsp kosher salt

1 tbsp vanilla extract

2 sticks (1 cup) salted butter, at room temperature

2 large eggs

1 cup crushed pretzels

1 cup freeze-dried strawberries

4 cups strawberry ice cream


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a bowl, whisk together flour, baking soda, and salt.

3. In another bowl, beat butter, brown sugar, and granulated sugar until creamy.

4. Add eggs and vanilla extract to the butter mixture and mix well.

5. Gradually add the dry ingredients to the wet mixture, mixing until combined.

6. Fold in crushed pretzels and freeze-dried strawberries.

7. Scoop dough onto the prepared baking sheet and bake for 10-12 minutes.

8. Allow cookies to cool completely on a wire rack.

9. Scoop strawberry ice cream onto one cookie and top with another to form a sandwich.

10. Wrap each sandwich in parchment paper and freeze for at least 2 hours before serving.

Notes

Ensure cookies are completely cooled before assembling to prevent melting.

For added flavor, consider adding white chocolate chips to the cookie dough.
